    Preheat oven to 180C.

    Fry onion and garlic for a few minutes until tender.

    Add in spinach, herbs, salt, pepper, and water, and fry until the water has evaporated.

    Cool down the filling, then spread it on a large plate and put it in the freezer for 5 minutes.

    Once cooled, add in the cheese and egg white and mix well.

    Spread the mixed filling over the pastry sheet and roll it up.

    Press down to flatten slightly and slice.

    Brush with egg yolk mixed with a tsp of milk, add sesame seeds, and bake for 30-32 minutes.

    Leave to cool for 5-10 minutes and eat warm or cool.
