Puff Pastry with Chive Pesto and Jarlsberg Cheese

A delicious pastry recipe with chive pesto, Jarlsberg cheese, and sun-dried tomatoes.

    Make the chive pesto by blending the chives, basil, garlic, lemon juice, Parmesan, pine nuts, and olive oil in a processor or hand blender.

    Preheat the oven to 180C and add parchment paper to an oven dish.

    Chop the sun-dried tomatoes into small pieces.

    Cut the puff pastry in half horizontally and spread some pesto on each half.

    Evenly spread the slices of Jarlsberg cheese over the pesto.

    Sprinkle the chopped sun-dried tomatoes over the cheese.

    Season with salt and pepper to taste.

    Cover with the other half of the pastry and brush egg yolk all over.

    Using a pizza cutter, slice into triangles by cutting a cross and then diagonally.

    Sprinkle with sesame seeds and bake for 35-40 minutes.

    While the pastry is baking, prepare the hot honey by mixing 2 Tbs of honey with some chilli flakes and microwaving for 15 seconds.

    Drizzle or brush the hot honey over the pastry as soon as it comes out of the oven.
