Mini Apple Pies with Yogurt Dough
Replacing puff or filo pastry with yogurt dough.

Mix the yogurt with the salt and add the flour and baking powder and mix well, knead for 2-3 minutes and cover for 15-30 minutes while you get the filling ready.

Peel & core the apples and then sauté with all the filling ingredients until slightly soft (5-7 min) leave aside to cool

Preheat oven to 200C and line a dish with parchment paper.

Roll the dough out as thin as you can and grate half the butter on the bottom half and fold the dough over, turn 90° and roll out again, grate the rest of the butter into the middle and fold each side over. Turn 90° and roll out again into a rectangle.

Trim the edges if necessary. Cut into 8 squares and fill each one with some apple filling. Fold over the 4 corners and pinch in the middle.

Lay them on the dish and brush with egg yolk mix and sprinkle some sugar. Bake for 25-30 minutes depending how crunchy you want them.

Make the icing soon as they’re out of the oven, leave to cool for 5 minutes and drizzle over.
