Garlicky Courgettes and Carrots with Walnuts in Yoghurt
The perfect meze for these warm spring days. There’s a lovely sweetness to the vegetables that are lightly sautéed with some garlic before being stirred through the creamy yoghurt. It’s uplifted by some fresh dill and punctuated with the tang of chopped gherkins and crunch of walnuts. It’s wonderfully light and textured, but still substantial and wholesome.
