    Marinate the chicken in lemon juice, garlic, sumac, cumin, cinnamon, allspice, dried lime and chilli flakes.

    Bake the chicken over a bed of onions and garlic to soak up all the schmaltz and create a relish of sorts.

    Drizzle a punchy concoction of fresh garlic, green chillies, lemon juice and sumac all over the chicken.
