Fruit Sushi Rolls
These summer fruit sushi rolls are perfectly sweet, refreshing, and so fun to make! A treat to beat the heat!

Cook the sushi rice according to the package instructions. Once cooked, gently fold in rice vinegar to season. Let it cool to room temperature.

Thinly slice the dragon fruit, peach, and strawberries.

Place a soy paper wrap on a clean, dry surface.

Wet your hands to prevent the rice from sticking, then spread a thin, even layer of sushi rice over the soy paper, leaving about 1 inch of space at the top edge.

Arrange a combination of dragon fruit, peach, and strawberry slices on top of the rice. You can overlap the fruit slices slightly for a more colorful and visually appealing roll.

Start rolling from the bottom edge, using your fingers to tuck in the fruit and rice as you go. Roll tightly but gently to avoid tearing the soy paper.

Once rolled, use a sharp knife to cut the roll into bite-sized pieces.
