Cozy Autumn Recipe Ideas: Stuffed Tomatoes
A true classic, even though it's my first time cooking it

Prepare the vegan mince according to the package instructions (usually, it just needs to be soaked in hot water for a few minutes).

Finely chop the onion and grate the carrots. Add oil to a pan and sauté the onion and carrots until softened.

Cook the rice according to the package instructions.

Once the vegan mince has finished soaking, add it to the pan with the sautéed vegetables and cook together.

While everything is cooking, prepare the tomatoes by cutting off the tops and scooping out the insides.

Mix the cooked rice with the vegetable and vegan mince mixture. Add your desired seasonings.

Stuff the hollowed-out tomatoes with the rice and vegetable filling. Cover the tomatoes with foil and bake at 190°C (375°F) for about 35 minutes.

Remove the foil and bake for an additional 10 minutes to lightly brown the tops.
