    Cut the leek into small pieces and fry in a little oil until it becomes translucent.

    Add vegetable broth powder, salt and pepper, stir well and pour in water.

    Simmer the mixture until the leek gets soft.

    Puree the soup with a hand blender until it is creamy.

    Allow the vegan mince to swell in hot water, then fry it in a pan with a little oil.

    Serve the soup in a plate or bowl and garnish with the vegan mince, a dollop of whipped cream (vegan cream) and some chopped parsley.
