Parmesan Fried Egg
This is my favourite way to make a fried egg at the moment - I actually prefer it to the viral feta fried eggs!

Add a drizzle of oil to a pan on medium heat.

When the oil is hot, sprinkle in some grated Parmesan.

Crack an egg into the centre. I like to add extra grated Parmesan around the edges and over the egg.

When the white has set but the yolk is still runny, take it off the heat and add some black pepper.

Serve the Parmesan fried egg on a bed of rocket and enjoy!
