Cucumber Sushi Boats
This is such a quick, healthy lunch and you only need a handful of staple ingredients to make it! It’s perfect for summer when you don’t want to be doing any real cooking and are craving something refreshing but filling!

Cut the cucumber in half lengthwise and use a teaspoon to scoop out the centre.

Add the tuna, mayo, lemon and black pepper to a bowl and mash together. Taste and adjust the seasoning if needed.

Spoon the tuna mixture into the cucumber boats and top with spring onions and sesame seeds - enjoy!
