Onigirazu (Sushi Sandwich)
A great, quick lunch as you can fill it with anything you like (including leftovers) and it’s much easier to make than regular sushi!

Lay down a large piece of cling film.

Top with a square of nori. Add a few spoonfuls of sushi rice to the centre of the nori sheet and press into a square (leaving a large border).

Top with cucumber slices, the tuna mayo mixture, and sliced avocado.

Top with another thin layer of sushi rice and sprinkle over the spring onion and sesame seeds.

Cut a piece of nori into a diamond shape and use it to cover the filling.

Fold the corners of the bottom sheet of nori over the top sheet to seal the filling in.

Wrap tightly with cling film - this helps everything stay together.

After a few minutes, unwrap the onigirazu, cut in half and enjoy!
