Chilli Lime Prawn & Halloumi One Pot Rice

Sooo easy to make! Dinner for one, but makes two portions.

    Fry the halloumi in a pan with a tsp of oil on either side until golden brown, then leave to one side.

    In the same pan, add the chopped onion and red bell pepper and fry off until softened, seasoning with salt, pepper, paprika and some mixed Italian herbs.

    Add in the frozen prawns and fry everything off for around 5 minutes.

    Pour in the tin of chopped tomatoes and 200ml of water, and leave to simmer for a further 5 minutes.

    Cook the rice, then pour into the pan and stir everything through.

    Add the halloumi back into the pan with some fresh parsley and serve!
