Sichuan boiled dishes are generally fresh ingredients cooked shortly with Pixian Broad Bean paste, chili and other spicy ingredients, then hot water or stock is add to turn it into a red soup.

Some fresh ingredients(most typically bean sprouts ) are used as a base of the finished dish.

The red soup of dish is poured in a big bowl with the bean sprouts in the bottom, then we top the dish with garlic and chili flakes, and pour some hot oil over to finish off the dish.

The most typical Sichuan boiled dishes are Boiled Beef and Boiled Fish, here we use this method to make one of our favourite tofu products- Tofu Skin
