Rice Noodles with Spicy Pineapple
Sour, spicy, appetizing and refreshing noodle dish for a hot summer day.

Peel the pineapple, cut it into chunks (about 2cm wide), add the pineapple to a bowl, add 2 tbsp chili oil, mix everything well and let it marinate for 15 mins.

Chop the garlic, slice the lime and onion, cut the scallion and coriander into small pieces, squeeze the juice out of the lemon. Chop the chili small.

In a big bowl, add garlic, 4 tbsp chili oil, soy sauce, vinegar, lemon juice.

Boil 1 L water, add the veggie stock, when the water boils, add the rice noodles, cook until the noodles are done, pour the noodles with the soup in the bowl, add pineapple, chili, onion, scallion, coriander and lime.
