Pink Beetroot Pasta
Seriously so creamy and delicious and is filled so much goodness.

Preheat oven to 200 degrees C.

Drizzle raw beetroot in olive oil and wrap it in foil.

Roast beets for 40 mins in the oven.

Cook the pasta.

Once finished roasting, let the beetroot cool down and then peel off skin.

Add all ingredients to a blender until consistency is smooth.

Drain pasta.

Over medium heat pour the pink sauce over the pasta and mix, for 5 mins.

Serve and top with feta and basil.
