    Preheat oven to 180 degrees C. Dice the sweet potato and place onto pan. Cover sweet potato in olive oil, paprika, salt, pepper, cumin and garlic powder. Roast for 30-35 mins.

    Prepare the rice as well as the salad dressing while the sweet potato roasts.

    Assemble all the components of the salad together. Top with dried cranberries and drizzle the dressing. Enjoy!!
