    For the bravas sauce, add olive oil to a pan over medium heat. When hot add in the shallot and garlic. After 5 minutes add in the oregano, sugar and sweet paprika. After 2 minutes add in the tomatoes and cook for 20 minutes. Add the water into the tomatoe mixture and cook for another 5 minutes. When all done, add to a bowl/cup to blend the sauce smooth with a handmixer.

    For the Aioli, add egg yolks and garlic into a bowl, mix with a fork. While mixing with a handmixer very slowly add in the oil, better to do this slowly than rush through! After you’ve add all the oil add in the lemon juice and mix a bit more.
