Preheat your oven to 210 degrees C.

Cut your potatoes into halves, add to a pot of cold water and slowly bring to a boil. Boil for 20 minutes. Strain, and add to a rack lined with baking paper. Crush the potatoes with a glass till flat. Spray/drizzle with olive oil and salt and pepper and pop in the oven for 50 minutes.

To assemble, start with the crispy potatoes, the bravas sauce and aioli. Mix all together and start digging in!
