    Make the sauce by combining fish sauce, Palm sugar, and Tamarind paste.

    Prepare the chicken by mixing fish sauce, sugar, and white pepper.

    Cook the noodles according to the package instructions.

    Heat oil in a wok and scramble the eggs.

    Add the shallot and garlic and stir-fry until fragrant.

    Add the chicken and cook until browned.

    Add the sauce and stir-fry until the sauce thickens.

    Add the noodles, tofu, bean sprouts, and Chinese chives, and stir-fry until combined.

Notes

Making smaller batches will keep your wok hotter, which will make your Pad Thai cook faster and come out better.
