Whisk wet ingredients: milk, egg, butter, pumpkin purée, and vanilla into a small bowl.

In a separate bowl, mix your dry ingredients: flour, sugar, baking powder & baking soda, salt, pumpkin pie spice in a medium bowl and create a little well in your dry ingredients. Add and pour the wet ingredients into the dry. Mix until just combined & do not overmix.

Make pancakes over medium low heat and top with butter and syrup!
