Whisk wet ingredients: milk, egg, butter, and vanilla into a small bowl.

In a separate bowl, mix your dry ingredients: flour, sugar, baking powder & baking soda, salt, cinnamon and nutmeg in a medium bowl and create a little well in your dry ingredients add in 1/4 c of chopped apples and pour the wet into the dry.

Mix until just combined & do not overmix.

Make pancakes over medium low heat.

Top with vanilla Greek yogurt and sautéed cinnamon apples + syrup.
