    Roast raw cashews in a preheated oven at 140°C with the fan on for 20 minutes. After 20 minutes, stir the cashews and roast for another 10 minutes, then set them aside to cool.

    In a large bowl, whisk together salted egg powder, sugar, salt, mushroom powder, and chili powder. Add egg whites and stir until it forms a thick paste. Mix the cooled cashews into the paste until they’re well coated.

    Spread the coated cashews on a tray and bake at 140°C with the fan on for 20 minutes. Stir the cashews and bake for another 20 minutes until dry. Mix in curry leaves and dried chilies, then bake for another 15 minutes until crunchy.
