Pickled Cherry Tomatoes
If you love pickled fruit, especially preserved sweet and sour plums, you’ll love this! It’s a refreshing and tangy side dish that’s easy to make at home.

In a small pot, mix water, rock sugar, and dried preserved plums. Bring to a boil, then lower the heat and simmer until the liquid is reduced by half. Let it cool completely.

Cut a small ‘X’ on the top of each cherry tomato. Boil a pot of water, then turn off the heat. Add the tomatoes for 45 seconds, then place them in an ice bath to loosen the skins and peel them off.

Put the peeled tomatoes in a jar. Pour the cooled brine over the tomatoes until they’re fully covered. Seal the jar and refrigerate overnight then serve!
