One of my favorite Thai dishes, packed with flavor and super easy to make.

    Mix light soy sauce, dark soy sauce, fish sauce, oyster sauce, and brown sugar to make the sauce.

    Smash garlic and chilies into a paste. Cut the long beans into small pieces.

    Heat oil in a wok over medium-high heat, and fry an egg until the edges are crispy and the yolk is runny. Remove the egg and drain the excess oil.

    Sauté the chili-garlic paste until fragrant, then add the minced pork. Break it apart and cook until the water evaporates and the fat starts to sizzle.

    Add the long beans and sauce, and sauté for a few minutes. Finally, add Thai basil leaves and cook until they’re wilted. Serve with rice and the egg on top!
