Pear Cheesecake with Prosciutto

    Blend crackers, then add melted butter and pulse through until combined.

    Form the "crust" in a 6" mold, making sure to press it well. Let chill in the fridge for 15 minutes.

    Mix the cream cheese, yogurt, lime zest, and honey until well combined. Mix in diced pear.

    Top the crust with cheese mixture. Chill in the fridge for at least 30 minutes.

    Remove the mold. Garnish cheesecake with torn prosciutto, some extra lime zest and honey.
