Grilled Halloumi Cheese with Sweet and Spicy Roasted Tomatoes

Perfect light meal or one impressive appetizer - this combo is sure to surprise!

    Slice a few ripe tomatoes, drizzle them with a little bit of honey, a generous amount of olive oil, a few shakes of red pepper flakes, salt, dried basil and freshly cracked black pepper.

    Roast at 425F for 20 minutes.

    Meanwhile, slice the cheese, grill, or pan fry on both sides until golden.

    Place cheese on top of cooked tomatoes to allow it to absorb some of the juices.

    Garnish with chopped parsley, fresh basil, and some extra olive oil.

    Serve with baguette or any fresh, crusty bread of your choice.
