Marinade squid in ingredients listed above for at least 30 minutes.

Make the roasted corn aioli by first roasting corn in an open fire, or charring it on your stove. Add all the ingredients listed above into a blender (or use a hand blender), and mix them until they form into a mayo.

Mix together the sweet potato flour in some water to form some bits that will crisp up later on.

Coat the marinated squid in the dry batter, and fry at 165C for about 5 minutes. Remove and let cool and double-fry at a higher temp. Approximately 180C and above should be fine. Fry it in for around 1-2 minutes until crispy.

Transfer into a bowl, and apply sweet corn seasoning and mix to combine.
