Chicken in Rose Petal Sawse

A medieval dish using roses that are starting to go bad, believed to have cooling properties and soothing effects on the digestive and respiratory systems.

    Start by butchering your chicken and place it in a container. Add in chicken broth, ground ginger, salt, and sugar. Bring it to a boil and let the chicken soften and extract some of its flavor.

    While it boils, grind rose petals and slivered almonds in a mortar and pestle or food processor until it's a fine paste.

    Remove the chicken once softened, and add in your rose-almond paste. Mix well and let simmer until well integrated.

    Fry the chicken in a pan with a mixture of oil and saffron. Cook to desired doneness.

    Plate it all in a bowl, and add rose petals for garnish. Serve and enjoy!
