Viral Crispy Rice Salad
Have you seen this viral salad all over your feed? We were inspired by @kalejunkie and her drool-worthy creations. This is our version of her recipe made in the HQ, with a few little tweaks!

Preheat the oven to 200C or 390F. Line a baking tray with baking paper. Spoon the rice onto the tray.

Mix together the tamari, chilli crunch and sesame oil. Pour the mixture over the top of the rice and toss together.

Spread the rice into one thin layer. Bake in the preheated oven for 25-30 minutes, making sure to toss halfway through.

To make the dressing, combine all of the ingredients in a small bowl or jar. Whisk until smooth.

To make the salad, combine the cucumber, edamame, celery, spring onion, peanuts and chopped coriander in a large bowl.

Pour the dressing over the top and toss to combine. Add the crispy rice and toss again.

Serve immediately.
