Our take on the viral ‘Marry Me’ pasta. We can absolutely see why there are so many versions of this out there! It’s so easy, bursting with flavor and is on the table in <20 minutes.

    Heat 1 tbsp extra virgin olive oil in a non-stick pan over medium-high heat. Season the salmon on both sides with sea salt and black pepper. Cook for 4 minutes on one side before flipping and cooking on 3-4 minutes on the other side. Remove from the pan and cover to keep warm.

    Add the remaining olive oil to the pan along with the red onion and garlic. Sauté for 3-4 minutes before adding in the sundried tomatoes, chilli flakes and Italian herbs along with some sea salt and black pepper.

    Add the tomato paste, risoni and vegetable stock to the pan. Bring to the boil and then reduce the heat to a simmer for 10 minutes.

    Stir through the baby spinach and then remove from the pan.

    Add the salmon back to the pan. Garnish with chopped basil leaves, a squeeze of lemon juice and some grated parmesan cheese, if using.
