cream together 1/2 cup softened butter + 1/3 cup powdered sugar + 1 tsp vanilla

mix in 1 tbsp lemon juice + zest from 1 lemon (about 1-2 tsp)

add in 1 cup all purpose flour + 1/2 cup finely shredded coconut
