Preheat oven to 350F

Cream together butter, sugar, and vanilla

Add in flour and stir until combined

Press 2/3 of the dough evenly in a lined 9x9 baking dish

Bake for 10 min

Peel and chop apple into small pieces

Warm apple over low heat in coconut oil until soft

Sprinkle a little cinnamon and mix

Microwave caramel chips and coconut oil until melted and pour evenly on top of shortbread

Add the apples on top

Crumble remaining shortbread on top
