Preheat oven to 375F

In a heated oiled pan, add 1 cup blueberries and mash when able. Add 2 tbsp chia seeds and let it thicken off a burner

Mix together 1/2 cup softened butter + 1 tsp vanilla + 2 tbsp brown sugar + 1/4 cup granulated sugar + zest from 1/2 a lemon + 1 tbsp lemon juice

Whisk in 1 egg yolk

Add in 1 cup + 2 tbsp all purpose flour + 1 tsp baking powder

Scoop on a lined baking sheet

Roll into a ball and toss in a little sugar (optional)

Press down with palm and then using a tsp measuring tool slightly press down each center

Bake for 7 min

Add chia seed jam evenly and bake for another 5 min
