Espresso Mini Dark Chocolate Chip Cookies

    Brown 1/2 cup (1 stick) butter in a pan over low heat, stirring occasionally, for about 5 min.

    Pour into a large mixing bowl and add in 1/2 cup dark brown sugar + 1/4 cup granulated sugar + 1 tsp vanilla.

    Pour in 2 tbsp cooled espresso.

    Whisk in 1 egg.

    Add in 1 1/2 cup all purpose flour + 1/2 tsp baking soda.

    Fold in 1 cup dark chocolate chips.

    Scoop and roll on a baking sheet (24 total— I used 2 sheets).

    Bake at 375F for 7-9 min or until golden.
