Remove durian pulp from durian.

Combine egg yolks, milk, heavy cream, and durian. Blend until smooth and creamy.

In a pan, cook the custard over low heat, stirring constantly until it thickens enough to coat the back of a spoon. Do not let it boil.

Pour the custard back into the durian shells. Let them cool to room temperature, then refrigerate until set.

Sprinkle sugar evenly over the chilled custard. Use a kitchen torch to caramelize the sugar until golden brown and crisp.
