Wash, scrub, and soak the sweet potatoes in salt water for 15 minutes; dry them once done.

Place the sweet potatoes in a single layer in the air fryer basket and cook at 200 °C for 30 minutes.

Remove the sweet potatoes and dip them in ice-cold water for 1 minute. This will help to remove excess surface starch, allowing for more even browning and caramelization when they are returned to the air fryer.

Put the sweet potatoes back in the air fryer and cook at 180°C for an additional 15 minutes.

Remove from the air fryer, let cool slightly, and serve warm.
