Wild Garlic Chicken Wraps

Dice the chicken, add greek yoghurt and all of the seasonings/ingredients listed under chicken. Mix and place in the fridge.

Finely slice red onion before adding to an airtight jar. Combine boiling water, vinegar, sugar and salt, place on the hob and stir over a medium heat for a few minutes. Pour the liquid over the onions, give them a shake to fully coat, and leave to cool. Place in the fridge - these will keep for ages!

Mix together yoghurt, finely chopped parsley, garlic, and lemon juice.

Finely dice tomatoes, cucumber, parsley, mix together with salt and pepper.

Pan fry the chicken in olive oil until cooked through.

Sprinkle the flatbreads with water and grill for a few minutes or so before serving.

Serve with extra lemon!
