    Preheat the oven to 400 degrees F and add oil and tater tots to a large baking sheet. Cook for 7-10 minutes on one side. Remove from heat and smash with the bottom of a glass cup. Place back in the oven for another 8-12 minutes until brown and crispy.

    Meanwhile in a small blender cup (we like the @vitamix ones), add sun dried tomatoes, roasted red pepper, sunflower seeds pinch of salt and a squeeze of lemon. Add water as needed to blend ingredients until mostly smooth.

    In a large bowl, add mayonnaise, vegan beef, spinach, corn, sun dried tomato mixture and tater tots. Stir gently until just combined and serve.
