Preheat oven to 350F.

Cream together vegan butter and brown sugar until light and fluffy. Stir in milk and vanilla. Add in the flour, baking powder, baking soda and salt and stir to make a dough. Place in the refrigerator.

Add apple filling ingredients to a small pot on the stove on medium and cook, stirring frequently, about 10 minutes until soft. Add half to blender bowl cup and blend until smooth. Add the remaining unblended pieces and stir together.

Meanwhile, make the pastry: stir together flour and sugar. Cut in the butter to make a crumbly mixture. Add the water and stir to make a dough. Roll out the pastry on a clean surface and use a glass or 3 inch round cookie cutter to make “pie crusts”.

Scoop 3 tbsp of cookie dough and roll into a ball. Use a measuring spoon to make a divot in the center. Add a spoonful of pie filling and place a pie crust on top. Repeat with remaining dough.

Bake for 10 minutes, then increase oven to 375 F and bake 4 minutes until golden brown. Remove from oven and let cool on a wire rack. Add a dollop of whipped cream just before eating if desired! Store at room temperature or in the fridge up to 4 days.
