Add sweet potato to a medium pot and cover with water. Boil on high heat until fork-tender. Drain and set aside.

Boil pasta according to package directions. Drain and set aside.

Meanwhile, in a blender or food processor, combine cashews, nutritional yeast, garlic powder, onion powder, salt, soy milk, lemon juice and cooked sweet potato. Blend until smooth and creamy, adding extra milk if needed.

Add sauce to pasta, stir, and serve immediately. Garnish with chili flakes and parsley if using.
