    Prepare Ingredients: Chop the green onion, separating the whites from the greens. Cut the tomatoes into chunks.

    Whisk Eggs: In a bowl, whisk the eggs until well beaten. Season with salt and pepper to taste.

    Cook Eggs: Heat a pan over medium-high heat and add a little oil. Once the pan is hot, pour in the whisked eggs. Allow the eggs to cook until they are set and hardened, but still a little runny. Remove the cooked eggs from the pan and set aside.

    Prepare Stir Fry: Clean the pan if necessary. Add a bit more oil to the pan and heat it up. Add the whites of the green onion to the pan and stir-fry until fragrant. Add the chunks of tomato to the pan. Season with salt and soy sauce to taste (optional ketchup). Stir-fry until the tomatoes are slightly softened but still hold their shape.

    Combine Ingredients: Return the cooked eggs to the pan with the tomatoes and green onion. Mix everything together until well combined and heated through. Garnish the dish with the chopped green part of the green onion.
