    Place the konbu and anchovies in a pot with 4 cups of water. slowly bring the water to a simmer over low heat. Let it simmer for 15mins

    Add the bonito flakes to the pot. Let it simmer for about 5 minutes.

    Cook one serving worth of somen noodles, usually 2-3mins

    In a large bowl, combine the condiments

  5. 5

    Pour the prepared broth into the bowl with the soup base, stirring to combine.

    Add the cooked somen noodles to the bowl.

    Top with finely chopped green onions.
