    Wash the rice cakes.

    In a large pan or pot, bring enough water to cover the rice cakes to a boil.

    While waiting for the water to boil, prepare the sauce. In a bowl, mix together the gochujang, gochugaru, sugar.

    Once the water is boiling, add the rice cakes to the pan. Boil them until they are softened, about 5 minutes.

    Add the sauce mixture to the pan with the rice cakes. Stir well to combine.

    Add the chopped vegetables and fish cakes (if using) to the pan. Stir to coat everything in the sauce.

    Let the mixture boil until the sauce thickens and the vegetables are cooked to your liking, about 5 minutes.

    Once the sauce has thickened and the vegetables are cooked, remove the pan from heat.

    Serve the tteokbokki hot, garnished with sliced green onions and sesame seeds if desired.
