Heat a bit of oil over medium heat.

Add the chopped onion and stir-fry until it becomes translucent and fragrant.

Add 2 cups of chopped kimchi to the pot. Stir-fry for a few minutes until the kimchi is well combined with the onions.

Pour in enough water to cover all the ingredients in the pot.

Add 1 tablespoon of soy sauce, 1 tablespoon of gochujang, and a teaspoon of sesame oil.

Add 2 packs of sundubu (soft tofu) to the pot. Break it up slightly.

Let the stew simmer for about 15 minutes to allow the flavors to meld together and the tofu to heat through.

Add salt to taste.

Optionally, sprinkle some chopped green onion on top for a fresh touch.
