Add the chopped pork belly to the hot pan and cook until it starts to render out the fat, stirring occasionally, for about 3-4 minutes.

Once the pork belly is starting to crisp up, add the white parts of the chopped green onions to the pan and stir-fry for another minute.

Add the chopped kimchi to the pan and continue to stir-fry for about 2-3 minutes until the kimchi is heated through and slightly caramelized.

Add the leftover rice to the pan and break up any clumps with a spatula, allowing the rice to crisp up slightly.

Season the fried rice with salt to taste, and if desired, add a splash of soy sauce or gochujang for extra flavour.

Once the fried rice is heated through and well mixed, turn off the heat.

Place cheese evenly over the top of the fried rice.

Cover the pan with a lid and let it sit for 1-2 minutes, allowing the residual heat to melt the cheese.
