Cut the pork belly into slices about 1/2 inch thick.

Add the pork belly slices into a hot pan and sear until both sides are golden brown.

Add a splash of cooking wine and mirin (or sugar) to the pan and let it cook for an additional minute.

In a small pot, create a layer of onion rings at the bottom.

Add the slices of ginger and bay leaves.

Place the seared pork belly slices in the pot.

Pour 2 tablespoons of soy sauce over the pork.

Cover the pork with BOILING water

Season with salt and honey to taste.

Let it simmer on low heat for 40 minutes to 2 hours, depending on your preferred tenderness. Stir occasionally to ensure even cooking and seasoning.
