Gooey Banana Almond Flour Cookies

Perfectly sweet, gluten free, easy to make, and you only need pantry staples plus one egg… so nothing fancy is required!

    Preheat oven to 350 F and line a large baking sheet with parchment paper.

    Peel the bananas and mash them in a bowl until creamy. Add in the egg and brown sugar and whisk well.

    Add in the almond flour, cinnamon, vanilla, baking soda, and sea salt and stir well until the mixture is combined.

    Fold in your chocolate chips.

    Drop about 2 tablespoons of the cookie dough on the parchment-lined baking sheet and form it into a cookie shape.

    Bake on the center rack of the preheated oven for ~20 minutes, or until the cookies are golden-brown around the edges and set up.

    Allow to cool for a few minutes before transferring to a wire cooling rack.

    Store in the fridge for 5-7 days.
