    Make the dressing: - 1 cup @Mezzeta drizzle olive oil - 2 tbsp lemon juice - 1 tbsp white wine vinegar - 1 tsp dijon mustard - Pinch of salt, garlic and pepper - 2 tbsp finely chopped parsley - 1 tbsp chopped mint

    Make the salad: - 3 cups chopped kale - 1 pint halved cherry tomatoes - 1/2 red onion, diced - 2 cups cooked orzo - 1 head cauliflower, roasted w olive oil + turmeric - 1 can chickpeas drained and rinsed - 1/3 cup vegan feta - 3 tbsp pumpkin seeds
