Greek Inspired Feta Salad with Honey Roasted Pecans

A perfect summer and spring salad with sweet honey roasted pecans, salted feta cheese, and crispy greens

    Toast the pecans on a pan with the honey for about 3-5 minutes. Once caramelized a bit, take them off the stove and chop roughly.

    In a bowl, mix olive oil, lemon juice, salt, and pepper. Add baby spinach, avocado, cucumber, corn, and feta cheese. Toss around.

    Sprinkle with honey roasted pecan nuts and drizzle with balsamic glaze.
