Elegant Simple Blackberry & Coconut Date Salad with Honey Glazed Almonds

Imagine the lavender fields of Provence in the South of France. And that you are sitting in one of those fields with family and friends eating this salad with maybe a French coq au vin or some roast Dijon mustard pistachio chicken.

    Finely chop baby spinach. Mix it with a dressing of a little olive oil and a little lemon juice as well as a bit of salt.

    Place the blackberries and chopped dates on top of the baby spinach.

    Roast a small handful of almonds in 3 tablespoons of honey on a pan for approx. 5 minutes. Or until they have been caramelized. When they are cold, chop them roughly. And sprinkle them over the salad.


Notes

This is a salad that also could taste good as a side dish to a curry chickpea dish.
